Pasta Salad Quick and Easy Lunch Salad - This quick and easy recipe for the best lunch salad, is made with chicken, pasta, and an included recipe for an Asian dressing. So convenient, in that it can be made ahead and kept in the fridge, this healthy hearty lunch salad is out of this world!

Ingredients to make Quick and Easy Lunch Salad

750 g (1 1/2 lb) boneless, skinless chicken breasts or highs
125 mL (1/2 cup) unseasoned rice vinegar
50 mL (1/4 cup) sodium-reduced soy sauce
50 mL (3 tbsp) minced gingerroot
2 cloves garlic, minced
5 mL (1 tsp) granulated sugar
500 g (1 lb) pasta or rice noodles*
4 medium carrots
2 sweet red, yellow or green peppers
250 g (8 oz) snow peas
25 mL (2 tbsp) sesame oil

Directions to make Quick and Easy Lunch Salad

Step 1:

Cut chicken into 5 cm (2 in) julienne strips. .In bowl, combine vinegar, soy sauce, gingerroot, garlic and sugar; stir in chicken. Cover and let stand for 30 minutes.

Step 2:

Meanwhile, in large pot of boiling water, cook pasta until tender but firm; drain. Rinse thoroughly under cold running water; drain and place in large salad bowl. Cut carrots and red peppers into julienne strips; set aside.

Step 3:

In large nonstick skillet, cook chicken over medium-high heat, stirring often, for 3 minutes or until no longer pink; add to pasta. Add carrots and red peppers to skillet; stir-fry for 3 minutes. Transfer to bowl with pasta.

Step 4:

Add reserved marinade plus 125 mL (1?2 cup) water to skillet; bring to boil and boil gently for 5 minutes. Add snow peas to skillet; cover and cook for 1 minute. Pour mixture over pasta; add sesame oil and toss to mix.
